I have decided that Fridays will be dedicated to food lovers (as if the rest of my days are not). Fridays will be a day to post food product reviews, share recipes, and host some great food giveaways!! Naturally, I will focus on sweets but please let me know if there are other types of food that you would be interested in reading about.
This Food Friday I will be sharing an awesome cake filling recipe. I have made this filling before and it has become a favorite of mine and a hit with anyone who eats my cakes! I got this recipe from Cake Central.
Light Raspberry Mousse
Ingredients
12 oz package of frozen raspberries
2/3 cup water
1 cup sugar
1 T lemon juice
3 T cornstarch dissolved in 1/4 cup of water
2 T cream cheese
8 oz extra creamy whipped topping
Instructions
Combine raspberries, water, sugar, and lemon juice in a saucepan and bring to a boil. Let simmer until raspberries have broken down, about 15 minutes. Remove and strain mixture in a fine mesh sieve. Return "juice" to heat and add the cornstarch/water mixture to the raspberry "juice", stirring constantly. Bring it to a boil and simmer for 5 minutes. Remove and cool completely. It should set up into a jelly substance. Beat the cream cheese until smooth. Add the cooled raspberry jelly to the cream cheese and beat until mixed. Stir in the whipped topping until it's mixed in with the raspberry cream cheese.
