Follow throughout the week and see how I create a cake while juggling work, blogging, and mommy duties. This is day 2.
Today I collected all my ingredients for the baby shower cake I am making for a luncheon this Friday. I had to buy a ton of ingredients!! I also decided to get started on some of the prep work so I would have less to do during the week. The easiest thing to do is to make the icings and fillings ahead of time. Today I made the fillings, something I cannot even think of making a cake without:
Filling 1: Oreo Creme
Ingredients
8 oz cream cheese, softened
12 Oreos
2 cups thawed whipped topping
Directions
Beat cream cheese and sugar in a large bowl on medium speed until well-blended. Crush the cookies into a coarse consistency. Add the whipped topping and crushed cookies and blend on low speed.
Filling 2: Fudge
Ingredients:
1 1/3 cups mashmallow creme
1 1/2 cups sugar
2/3 cup evaporated milk
1/4 cup (unsalted)
1/4 tsp salt
3 cups semi-sweet chocolate chips, melted
1 tsp. pure vanilla extract
1/2 cup hot water
Directions
In a large heavy saucepan over medium heat, combine marshmallow creme, sugar, evaporated milk, butter and salt. Stir constantly and vigorously while bringing to a full boil and cook for 5 minutes, stirring constantly. Remove item from heat and allow to cool until "just" warm. Stir in melted chocolate until smooth. Add 1/2 cup hot water and vanilla and mix with mixer.
